Salmon is one of the best to eat when on a keto diet. It is rich in protein and omega-3 fatty acids. The combination of salmon and pesto is surprisingly goodthat you will look forward to having another round of this meal!

Ingredients
  

For the salmon

  • 170 g salmon fillet
  • 1/4 tbsp salt
  • 1/4 tbsp black pepper
  • 1/8 tbsp dried thyme
  • 1/8 tbsp dried rosemarry

For the sauce

  • 1/2 cup fresh basil
  • 1 tbsp almonds
  • 1 tbsp parmesan cheese
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1/4 tbsp salt
  • 1/4 tbsp black pepper

Instructions
 

For the salmon

  • Season the salmon fillet with all the spices and herbs.
  • Heat a non-stick pan and add olive oil.
  • Add the salmon to the skillet, skin downfirst. Cook for a few minutes.
  • Flip the salmon carefully and continuecooking until thoroughly cooked. Set aside.

Forthe sauce

  • Usinga food processor, prepare all the ingredients.
  • Add the ingredients in the food processor.
  • Pulse on high until everything is coarsely chopped, about 1 minute.
  • Serve the salmon with pesto and a slice of lemon.
