
Keto Salmon with Chunky Basil Pesto
Salmon is one of the best to eat when on a keto diet. It is rich in protein and omega-3 fatty acids. The combination of salmon and pesto is surprisingly goodthat you will look forward to having another round of this meal!
Ingredients
For the salmon
- 170 g salmon fillet
- 1/4 tbsp salt
- 1/4 tbsp black pepper
- 1/8 tbsp dried thyme
- 1/8 tbsp dried rosemarry
For the sauce
- 1/2 cup fresh basil
- 1 tbsp almonds
- 1 tbsp parmesan cheese
- 2 cloves garlic
- 2 tbsp olive oil
- 1/4 tbsp salt
- 1/4 tbsp black pepper
Instructions
For the salmon
- Season the salmon fillet with all the spices and herbs.
- Heat a non-stick pan and add olive oil.
- Add the salmon to the skillet, skin downfirst. Cook for a few minutes.
- Flip the salmon carefully and continuecooking until thoroughly cooked. Set aside.
Forthe sauce
- Usinga food processor, prepare all the ingredients.
- Add the ingredients in the food processor.
- Pulse on high until everything is coarsely chopped, about 1 minute.
- Serve the salmon with pesto and a slice of lemon.
